Bourbon BBQ Beef Tenderloin

Ingredients
- 1/2 sweet onion, diced
- 1/2 red bell pepper, diced
- 4 oz. bourbon
- 18 oz. Sweet Baby Ray's Honey Barbecue Sauce
- 4 8-oz. filets of beef tenderloin
Directions
- In a small sauce pan over medium heat, sauté onions and peppers in butter until soft. Add bourbon and SBR Honey Barbecue sauce, simmer 2-3 minutes.
- Place filets of beef in small shallow pan, add bourbon BBQ and marinate in refrigerator for 3-4 hours.
- Remove filets from container and preheat grill.
- Pour bourbon BBQ sauce in small sauce pan and bring to boil, then reduce to simmer. Place beef on grill and baste with sauce as they cook to desired doneness.
- Top remainder of sauce on filets.
(This recipe can be made using any good cut of meat or chicken or pork loin).
