12 corn tortillas, warmed according to package directions (5 inches)
2 cups diced pineapple
2 avocados, peeled, halved, pitted and thinly sliced
1/2 cup packed fresh cilantro leaves
1/4 cup Sweet Baby Ray’s Smoked Chipotle

Instructions
Smoked Chipotle Pulled Pork: In bowl of slow cooker, stir together 1 cup Sweet Baby Ray’s Smoked Chipotle, pineapple juice, lime juice, vinegar, onion, garlic, cumin, oregano, salt and pepper. Add pork shoulder, tossing to coat. Cover and cook on HIGH for 6 to 8 hours or until pork is very tender.
Using 2 forks, transfer pork to cutting board and shred. Return to slow cooker and toss with sauce. Keep warm.
Pulled Pork Tacos Al Pastor: Meanwhile, in medium bowl, stir onion with vinegar, salt and sugar. Let stand for 15 to 20 minutes or until lightly pickled.
Serve pulled pork in warm tortillas with pineapple, avocado, pickled red onion and cilantro. Serve with lime wedges and Sweet Baby Ray’s Smoked Chipotle.
