Sweet Red Chili Grilled Corn Fritters
time: 30-60 minutes | serves: 1 to 6Ingredients
- 2 cups all-purpose flour
- 3 tbsp cornmeal
- 1 tsp baking powder
- 1 tsp kosher salt
- 1 1/2 cups fresh or frozen corn kernels
- 2 tbsp finely chopped fresh chives
- 2 tbsp Sweet Red Chili Sauce and Marinade
- 1 cup of milk
- 1 tbsp oil
- 2 large eggs
- Oil for frying

Instructions
- Mix all dry ingredients together with a whisk (all-purpose flour, cornmeal, baking powder, salt).
- Add eggs, milk, oil, and Sweet Red Chili Sauce into dry ingredients and mix well.
- Add in corn kernels and chopped chives and mix well until the mixture is thick and thoroughly combined.
- Heat a cast iron skillet on the grill over medium heat, add enough oil to the bottom of the skillet.
- Once the oil is hot and simmering, place a spoonful of batter into the skillet and spread to form a pancake shape.
- Once the bottom is golden brown, flip the fritter over to cook the other side about 1-2 minutes.
- Remove the cooked fritter from the skillet and place on a plate lined with paper towels.
- Serve immediately with a side of Sweet Baby Ray's Sweet Red Chili Sauce.
