Garlic Parmesan Chicken Kabobs

  • 1 pound chicken
  • 1 summer squash, cut into rounds and halved
  • 1 zucchini, cut into rounds and halved
  • 1/2 cup cherry tomatoes
  • 1 1/2 cups Sweet Baby Ray’s Garlic Parmesan Sauce & Marinade
  • Parsley for garnish


  • Cut chicken into 1-inch pieces and add to a medium bowl then coat with 1 cup Sweet Baby Ray’s Garlic Parmesan Sauce & Marinade. Place in refrigerator to marinate for at least 2 hours.
  • Thread skewers* alternately with chicken, tomatoes, zucchini and summer squash and place in a baking dish.
  • Heat grill to medium-high heat. Grill for 3-4 minutes per side until the internal temperature of the chicken reaches 165 F. Brush with remaining 1/2 cup of sauce after each rotation.
  • Remove skewers from grill and let rest for 10 minutes. Brush again with sauce and sprinkle parsley for garnish.
*Make sure to soak wooden (or use metal) skewers for 30 minutes before cooking so they don't burn while on the hot grill.
