Slow Cooker BBQ Carnitas Tacos

Ingredients

  • 4 pounds pork shoulder
  • 1 tablespoon cumin
  • 2 tablespoons smoked paprika
  • 1 small white onion, chopped
  • 2 cloves garlic, minced
  • 2 cups Sweet Baby Ray’s Honey Chipotle Sauce
  • 1 (15.25-ounce) can corn
  • 6” corn tortillas, warmed
  • Cilantro, for topping

Directions

  • Mix cumin and smoked paprika together and rub into all sides of the pork.
  • Place the pork into a slow cooker with minced garlic and coat with Sweet Baby Ray’s Honey Chipotle Sauce. Cover and cook on low for 4-6 hours.
  • Remove pork and pull apart until completely shredded.  
  • Serve in corn tortillas and top with corn, onion, and cilantro.
