Bourbon BBQ Beef Tenderloin

with Honey Barbecue Sauce

  • 1/2 sweet onion, diced
  • 1/2 red bell pepper, diced
  • 4 oz. bourbon
  • 18 oz. Sweet Baby Ray's Honey Barbecue Sauce
  • 4 8-oz. filets of beef tenderloin
  • In a small saucepan over medium heat, sauté onions and peppers in butter until soft. Add bourbon and SBR Honey Barbecue sauce, simmer for 2-3 minutes.
  • Place filets of beef in a small shallow pan, add bourbon BBQ and marinate in the refrigerator for 3-4 hours.
  • Remove filets from the container and preheat the grill.
  • Pour bourbon BBQ sauce in a small saucepan and bring to a boil, then reduce to simmer. Place beef on the grill and baste with sauce as they cook to the desired doneness.
  • Top the remainder of the sauce on the filets.
