Honey Mustard Potato Salad

  • 1 pound red skin potatoes
  • ¼ of a red onion
  • 1 cup cheddar, shredded
  • ½ pound bacon, crumbled
  • ½ cup Sweet Baby Ray’s Honey Mustard Dipping Sauce
  • Salt and pepper
  • Scallions


  • Cut potatoes into quarters and boil.
  • Cook bacon in a skillet, then cool and crumble.
  • Add potatoes to skillet.
  • Dice red onion and scallions.
  • Combine cooked potatoes, bacon, half of the scallions, red onion, salt and pepper into large bowl, then add Sweet Baby Ray’s Honey Mustard Dipping Sauce and mix.
  • Serve potato salad in small bowl and top with cheddar and the rest of the scallions.
