Grilled Street Corn

with Honey Mustard Dipping Sauce
time: 30-60 minutes | serves: 1 to 12
  • 2 cups Sweet Baby Ray’s Honey Mustard Dip
  • 12 ears of corn on the cob, husked and cleaned
  • ¾ cup pepper jack cheese, shredded
  • 1 tbsp Cajun seasoning
  • ¼ cup scallion, finely sliced
  • 1/8 tsp kosher salt
  • 1/8 tsp black pepper
  • Lightly oil or spray each corn cob and season lightly with salt and pepper.
  • Grill each corn cob until lightly charred on all sides.
  • Once each corn cob is charred, place the Sweet Baby Ray’s Honey Mustard Dip in a pan large enough to fit the corn cob and lightly coat the corn cob with the Sweet Baby Ray’s Honey Mustard Dip.
  • Sprinkle each corn cob with a small amount of Cajun seasoning, 1 tablespoon of pepper jack cheese, and 1 teaspoon of sliced scallion and serve immediately.
