Honey Mustard Potato Salad

with Honey Mustard Dipping Sauce
time: 15-30 minutes | serves: 1 to 4
  • 1 pound red skin potatoes
  • 1/4 of a red onion
  • 1 cup cheddar, shredded
  • 1/2 pound bacon, crumbled
  • 1/2 cup Sweet Baby Ray's Honey Mustard Dipping Sauce
  • Salt and pepper
  • Scallions
  • Cut potatoes into quarters and boil.
  • Cook bacon in a skillet, then cool and crumble.
  • Add potatoes to the skillet.
  • Dice red onion and scallions.
  • Combine cooked potatoes, bacon, half of the scallions, red onion, salt and pepper into a large bowl, then add Sweet Baby Ray's Honey Mustard Dipping Sauce and mix.
  • Serve potato salad in a small bowl and top with cheddar and the rest of the scallions.
