BBQ Black Bean Quesadillas

with Original Barbecue Sauce
time: 15-30 minutes | serves: 4
  • 1 cup Sweet Baby Ray’s Original Barbecue Sauce
  • 1/2 cup salsa
  • 16 oz. black beans
  • 2/3 cup sour cream
  • 1 tbsp chili powder
  • 8 small flour tortillas
  • 3 cups shredded Monterey Jack cheese
  • Original Barbecue Sauce BBQ (undefined)
  • In a small bowl, mix 1/2 cup Sweet Baby Ray's Barbecue Sauce and the salsa, set aside.
  • Combine beans, remaining 1/2 cups Sweet Baby Ray's Barbecue Sauce and sour cream in a medium bowl. Stir with a fork, mashing the beans against the side if the bowl (mixture will be lumpy). Stir in chili powder.
  • Place 1 tortilla in a nonstick skillet.
  • Spread with about 1/4 cup of the bean mixture, starting at the center and leaving a 3/4-inch edge. Sprinkle with cheese. Top with another tortilla.
  • Cook over medium/high heat until light brown.
  • Flip the quesadilla and cook until the cheese is melted.
  • Serve with the salsa mixture.
