Buffalo Chicken Hasselback Potatoes

Ingredients
- 3 baked potatoes
- ½ cup Sweet Baby Ray’s Buffalo Wing Sauce
- 2 chicken breasts, thinly sliced
- ½ cup sour cream
- ½ cup scallions
- 1 tablespoon oil
Directions
- Preheat the oven to 350 F and place precut potatoes onto a baking sheet.
- Bake in the oven until tender when pierced with a fork (about 1 hour).
- Heat oil in a skillet over medium heat. Add chicken and cook until chicken is no longer pink in the center.
- In a large bowl, pour Sweet Baby Ray’s Buffalo Wing Sauce over cooked chicken and mix.
- Remove potatoes from oven, stuff with shredded chicken and place back into the oven for 15 minutes.
- To serve, top with sour cream and chopped scallions.
