Buffalo Chicken Hasselback Potatoes

with Buffalo Wing Sauce

  • 3 baked potatoes
  • ½ cup Sweet Baby Ray's Buffalo Wing Sauce
  • 2 chicken breasts, thinly sliced
  • ½ cup sour cream
  • ½ cup scallions
  • 1 tbsp oil
  • Preheat the oven to 350°F and place precut potatoes onto a baking sheet.
  • Bake in the oven until tender when pierced with a fork (about 1 hour).
  • Heat oil in a skillet over medium heat. Add chicken and cook until the chicken is no longer pink in the center.
  • In a large bowl, pour Sweet Baby Ray's Buffalo Wing Sauce over cooked chicken and mix.
  • Remove potatoes from the oven, stuff with shredded chicken, and place back into the oven for 15 minutes.
  • To serve, top with sour cream and chopped scallions.
