Buffalo Chicken Quesadilla

with Buffalo Wing Sauce
time: 15-30 minutes | serves: 1 to 5
  • 1 1/2 cups grilled chicken, chopped
  • 1/4 of a red onion, diced
  • 1/2 cup fresh cilantro, roughly chopped
  • 2 cups cheddar, shredded
  • 1/2 cup Sweet Baby Ray's Buffalo Wing Sauce
  • Ten 7-inch flour tortillas
  • Slice the chicken and mix in a bowl with red onion and cilantro.
  • Add Sweet Baby Ray's Buffalo Wing Sauce to the bowl and stir until everything is evenly combined.
  • Place about ⅓ cup of the Buffalo chicken mixture on each tortilla and spread it evenly on the tortilla. Add the cheese and place another tortilla on top.
  • Place the filled tortilla on the grill and cook over medium heat until the outside is brown and crispy, the filling has heated through, and the cheese has melted.
  • Cut each quesadilla into quarters and serve.
