Buffalo Chicken Quesadilla

  • 1 ½ cups grilled chicken, chopped
  • ¼ of a red onion, diced
  • ½ cup fresh cilantro, roughly chopped
  • 2 cups cheddar, shredded
  • ½ cup Sweet Baby Ray’s Buffalo Wing Sauce
  • Ten 7-inch flour tortillas


  • Slice the chicken and mix in a bowl with red onion and cilantro.
  • Add Sweet Baby Ray’s Buffalo Wing Sauce to the bowl and stir until everything is evenly combined.
  • Place about ⅓ cup of the Buffalo chicken mixture on each tortilla and spread it evenly on the tortilla. Add the cheese and place tortilla on top.
  • Place the filled tortilla on the grill and cook over medium heat until the outside is brown and crispy, the filling has heated through and the cheese has melted.
  • Cut each quesadilla into quarters and serve.
